You can easily replicate the texture of a frittata with tofu. By adding turmeric and black salt, you can achieve an eggy taste. Add nutritional yeast for some cheesy flavor.
Asparagus and Basil Frittata
- Preheat the oven to 400° and grease a 8" x 8" baking dish.
- In a food processor or blender, place the tofu, nutritional yeast, arrowroot, turmeric, and black salt. Blend until smooth then set aside.
- In a sauté pan over medium heat, add olive oil, asparagus, garlic, and shallots and sauté for 1 minute. Add white wine and basil. Cover and let steam-sauté for another minute.
- Add the veggies to the tofu mixture and mix well. Pour into baking dish and sprinkle smoked paprika on top.
- Bake for 25 minutes.
