Garam Masala

Garam masala means “hot spice blend.” Traditionally, it includes cinnamon, cumin, cloves, cardamom and black pepper, but other spices such as mace, fennel or caraway can be added to suit the needs of a particular dish.

Use fresh whole spices when possible and grind them with a mortar and pestle or clean coffee grinder. When stored in an airtight jar away from heat and light, the spices will keep for up to 6 months.
