Sometimes I buy too much of a good thing. The mix of organic kale, chard, and spinach I like to buy in bulk sometimes gets soggy before I can use it all up. So instead of throwing it in the compost (not a bad thing) or throwing it away (bad), I use it to make pesto. I still add basil for the fragrant and taste but the greens help make it more nutrient-dense.
