Smokey Black Bean and Mushroom Tamales

If you’ve never made tamales before they may seem intimidating. Traditional tamale dough is made with masa marina (a special cornmeal used for making tortillas) and lard or shortening. This recipe is adopted from Chef Ramses Bravo who uses raw tahini and sunflower seed paste in place of oil.

You can find bags of dried corn husks and masa harina in Latin markets or the ethnic section of your supermarket.
